1 1/4 cup cottage cheese
3 large eggs plus 1 egg white
1/2 teaspoon vanilla extract
juice from 1 large tangelo
grated zest of 1 tangelo
1/2 cup almond meal
4 tsp psyllium husks
6 tbsp sugar
1 tsp baking powder
1/2 teaspoon baking soda
1. Preheat oven to 350F. Grease muffin tin or fill with paper liners.
In a large bowl, add the tangelo zest, almond meal, psyllium, sugar, baking powder, and baking soda. Mix well until combined with no lumps.
4. Add the wet mixture into the dry. Use a fork to quickly and lightly combine ingredients - do not overmix.
5. Divide the mix into muffin tins and bake for 25 - 30 minutes until well risen and golden. They will be puffed when done, and will fall slighty while cooling.
