2 - 3 red beets
2 - 3 tbsp tahini
1 clove garlic
3 tbsp freshly squeezed lemon juice
2 tbsp olive oil
1 tsp cumin
1 tsp salt
1. Wrap the beetroots in foil and bake at 360F for 30 - 40 minutes until tender. Wait to cool down, peel and chop them.
2. Place all ingredients in a food processor and process into puree.
3.Play around with it by adding either a handful of walnuts, a bunch of parsley or 2-3 roasted, peeled and chopped red bell peppers. You may try other additions as well and find out your own favourite.
