2 ½ cups cauliflower ' “rice ”
greens from 4 leaves of kale
1 small white onion, roughly chopped
½ cup grape tomatoes, halved
3 cloves garlic, minced
1 tbsp olive oil
salt & pepper to taste
- To prepare cauliflower rice, roughly chop 1 head of cauliflower and add to food processor. Blitz until it resembles small grains of rice. Add to oiled frying pan and saute for about 5 minutes until tender. Set aside.
In same frying pan, heat oil and add kale & onion – saute for 2 minutes.
- Add in tomatoes & garlic and saute for another 2 minutes.
- Mix in cauliflower rice and saute all together for 5 minutes.
- Salt & pepper to taste.
